The care we take in the vineyard and the passion for our terroir continues in our cellars.
Our philosophy is to let the wine express itself, so that it tells the whole story of the land from which it comes. To achieve this, we attach great importance to each step and make sure that the wine feels good. Each plot is harvested by hand when we consider that the grapes have reached maturity. During pressing, the juice flows gently into the vats without pumping. It is gravity that carries it. It is also used for clarification, since a long settling time of more than 24 hours means that no filtration is needed. This quietness offers a beautiful expression of the aromas.
Then, in our 27 enamel vats, the wine from each parcel or sector rests on its lees for almost 9 months. This period of calm allows the wine to reveal all the complexity, balance and elegance of the parcels from which it is made.
It is up to us to blend the villages, the places, the parcels, the old vines or the youngest, the Pinot Noir, the Chardonnay or the Meunier and the different vintages in order to allow their personalities to express themselves fully in beautiful cuvées that we dose very little, so that they reveal the best of our history.
